1 14-oz pkg fully cooked smoked sausage, sliced into ½-inch pieces
2 C frozen diced potatoes
1 C onion, thinly sliced
1 C bell pepper, diced
1 C Cheddar cheese, shredded
4 Tbsp butter, cubed
Salt and pepper
Heat grill or campfire. Tear four sheets of heavy-duty aluminum foil into 18-inch lengths. Spray with nonstick cooking spray. Divide contents between the 4 sheets of aluminum foil, placing items in the bottom half of the foil.
Fold the top half of the foil over to meet the bottom edge, crimp all three open edges tightly. Roll each edge twice.
Place over indirect heat for about 15 minutes. Remove from heat and allow to cool before cutting open the foil. Use caution when opening foil; it will release steam.
Note: Fresh potatoes diced very small also will work. Add in any desired vegetable. A touch of grill seasoning will also add a pop of flavor. Makes 4 servings.
