Lemon Chia Muffins with Cream Cheese Filling

2 C almond flour

¼ C unsalted butter, melted

2 tsp baking powder

2 Tbsp chia seeds

4 eggs

¼ C erythritol or sugar substitute

½ tsp salt

2 lemons, juice and grated rind


½ C cream cheese, softened

2 Tbsp ground erythritol or sugarsubstitute

Juice of half a lemon

Preheat oven to 350 degrees. Mix the dry ingredients together. Add the melted butter, eggs and lemon juice with the rind and stir thoroughly. Add the chia seeds and stir.

To make the filling, blend the cream cheese, lemon juice and erythritol together until blended. Lightly grease a muffin tin. Spoon the mixture into the muffin tin about halfway. Spoon about a large teaspoon of the cream cheese filling into the center of the cake mixture.

Place the remaining muffin batter over the filling and smooth out so the filling is covered. Bake for 20 to 25 minutes. Makes 6 to 8 muffins.
