Pulled Pork for 100

1 C brown sugar

½ C cocoa powder

6 Tbsp chili powder

4 Tbsp cumin

6 Tbsp salt

4 Tbsp black pepper

25 lbs pork loin, boneless

5 28-oz cans diced tomatoes

5 onions, diced

100 sandwich buns

1 gallon barbecue sauce

To make the rub, mix together brown sugar, cocoa powder, chili powder, cumin, salt and pepper in a bowl. Sprinkle over the loin and use hands to rub it into the loin until it is completely covered. Set aside for 30 minutes to marinate.

After marinating, sear loins in olive oil one or two at a time in a large pan over medium-high heat. Mix together tomatoes and onions in large roasters or slow cookers.

Place seared loin on top of vegetable mixture in roasters. Cover and cook on low for 10 hours. Remove lid and shred loin with a fork; then stir together meat, juices and vegetables.

Place a portion of pork on a sandwich bun and dress with barbecue sauce for serving. Makes 100 4-ounce servings.
